International Sushi Chef Course
Best suited for anyone ready to commit to a full 5-week, Monday-to-Friday schedule in Tokyo — course dates run on fixed monthly start blocks throughout the year, so timing your application around an upcoming intake matters.

What this is

The International Sushi Chef Course is an intensive five-week, hands-on training program held at Tokyo Sushi Academy's Tsukiji campus. Designed for beginners through intermediate learners, the curriculum teaches traditional Edomae sushi techniques alongside Japanese knife skills, fish preparation, sashimi, Japanese cuisine, tempura, food hygiene, and omakase-style counter service. Classes are taught in Japanese with English interpretation, and students spend every weekday building practical skills through repeated hands-on practice before completing a graduation exam.

Why this is useful

Tokyo Sushi Academy specializes in helping international students learn authentic Japanese sushi techniques through an intensive, practice-first approach. Instead of focusing only on making sushi, the curriculum develops the broader skills needed in a professional kitchen—from knife mastery and fish preparation to customer service at the sushi counter. Studying in Tsukiji also places students in one of Japan's most iconic culinary neighborhoods, surrounded by world-renowned seafood markets and sushi restaurants.
